1/2 cup honey - BCB Honey - Raw Honey - Cold Extract, Pure, Unpasteurized 2 lb

1/4 cup cornstarch

1/4 tsp salt 

1 tbsp lemon juice

1 tbsp butter

4 oz goat chèvre cheese, crumbled or scoop - Goat's Pride Dairy - Mt Lehman Cheese: Chevre Plain 110 g

1 egg, beaten - Skyland Acres - Free Range Eggs 1 Flat 30 Eggs

 

 

Instructions:

 

Preheat your oven to 375°F.

Roll out your pie crust and place it into a 9-inch pie dish.

In a large bowl, mix together the blueberries, honey, cornstarch, salt, and lemon juice until well combined.

Fold in the crumbled chevre goat cheese.

Pour the blueberry mixture into the prepared pie crust.

Brush the beaten egg over the edges of the pie crust.

Bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.

Let the pie cool before serving.
