Chicken Shrimp Lettuce Wraps 

Recipe

Prep Time: 15 – 30 minutes

Cook Time: 10 – 20 minutes

Serves: 4  

 

Ingredients: 

 

2 Heads of Baby Lettuce – Northern Greens Gourmet Baby Lettuce  

50 G Pea shoot Microgreens – Food on the Grow 

20 G Micro Cilantro – Sky Harvest 

20 G or Couple Sprigs of Fresh Basil – Sky Harvest 

1 – 2 Carrots – julienned 

1 Red Bell Pepper – or yellow bell pepper julienned 

1 English Cucumber – julienned 

1 Large Avocado

5 Cloves Garlic – Rivers Edge Garlic 

500 G Chicken Breast – Dhesi Meat Shop Souvlaki Chicken Breast 

500 G Large Shrimp – peeled and deveined 

1 – 3 Tbsp Olive Oil – All of Oils Savoury Butter Olive Oil

1 Package of Vermicelli Noodles  

Sauce – we recommend a sweet Thai chili sauce or the traditional peanut dipping sauce

Directions:

 

STEP 1

 

Wash, peel and cut carrots, cucumber, and bell pepper in a julienne style. Peel, core, and slice avocado in thin slices. Wash microgreens and set all vegetables aside. Peel and mince garlic and place in a small dish. Wash and strain lettuce and set aside. 

 

STEP 2 

 

Rinse chicken breast and shrimp in separate colanders and set aside. 

 

STEP 3

 

In a large pot, add water and boil over high heat. Once the water is boiling, add vermicelli noodles and cook according to package, approximately 10 – 12 minutes. Drain and transfer noodles to a strainer and cool them before setting them aside. 

 

STEP 4

 

While the noodles are boiling using a large skillet over medium heat, add olive oil and chicken breast and cook for approximately 5 – 7 minutes on each side until the internal temperature reaches 165F. Once the chicken breast is cooked, set aside on a cutting board to slice lengthwise. 

 

STEP 5

 

Add olive oil, garlic, and shrimp using the same skillet on medium heat. Cook for approximately 3 – 4 minutes on each side. Set aside once cooked.

 

STEP 6

 

Assemble all the ingredients into a lettuce wrap. Place two large butter lettuce leaves together, overlapping each other on a plate and add a small section of vermicelli noodles, length wise down the middle. 

 

STEP 7

 

Then, layering a small amount of julienned veggies on top of each other to create a complex taste in each bite. Top with shrimp and chicken and garnish with the microgreens. When finished adding the filings, carefully drizzle the preferred sauce. 

 

STEP 8 

 

Serve, devour and repeat!

These wraps are a great healthy and wholesome meal that provides protein and vegetables on a deliciously crisp lettuce leaf. Excellent for those who are gluten-free, dairy-free and low carbs as these are packed with nutritional content. Incredibly versatile as you can virtually add any vegetables, meats, and other toppings/garnishes.
