Cranberry-Orange Irish Soda Bread

Ingredients:

4 cups all-purpose flour

1/4 cup cranberry honey

1 tsp. baking soda

1 1/2 tsp. salt

4 tbsp. unsalted butter, cut into small pieces

1 1/2 cups dried or fresh cranberries

2 tbsp. grated orange zest

1 3/4 cups buttermilk

1 large egg, lightly beaten

Extra flour for dusting

 

STEP 1

Preheat your oven to 375°F (190°C).

 

STEP 2

In a large mixing bowl, whisk together the flour, honey, baking soda, and salt.

 

STEP 3

Add the butter to the bowl and use your fingertips to rub it into the dry ingredients until the mixture is crumbly.

 

STEP 4

Stir in the dried or fresh cranberries and orange zest.

 

STEP 5

In a separate bowl, whisk together the buttermilk and egg.

 

STEP 6

Add the buttermilk mixture to the dry ingredients and stir with a wooden spoon until a soft dough forms.
