Cranberry Sausage Brie Bites

Recipe

Prep Time: 20 – 25 minutes

Cook Time: 15 – 20 minutes

Serving Size: 14 Bite Size

 

Ingredients: 

 

230 Grams of Mild Italian Fennel Sausage – Stapleton Sausages

½ Cup Hot Cranberry Pepper Jelly – The BOG Riverside Cranberry Farm

115 Grams Brie (rind removed)

2 – 4 Garlic Cloves – Peace Arch Farms 

1 Large Egg – The EggStore 

1 Tbsp Water 

1 Pastry Sheet (thawed)

Micro Basil – Sky Harvest

2 Tsp Rosemary 

 

Directions:

 

STEP 1

 

Preheat oven to 400 F. Line two baking sheets with parchment paper and set aside. 

 

STEP 2

 

Slice brie thinly, peel and mince garlic. Set aside. Roughly chop sausages into small chunks and set them aside. 

 

STEP 3

 

In a medium skillet over medium-high heat, add sausages, minced garlic and cook for approximately 8 minutes. Add rosemary and incorporate for 3 minutes, then drain any excess fat. Turn off heat and set aside. 

 

STEP 4

 

Add egg, water, and whisk in a small mixing bowl to create an egg wash for the pastry sheet. 

 

STEP 5

 

Place the pastry sheet onto a lightly floured and clean surface. Brush egg wash on the entire sheet, including the corners. 

 

STEP 6

 

Spread hot cranberry sauce evenly on the pastry sheet, then top evenly with the cooked sausage. 

 

STEP 7

 

Gently place the sliced brie on top cover the entire section. It is okay to overlap!

STEP 8

 

Very carefully, at one end of the pastry sheet, slowly and carefully roll it up. TIP: rolling the pastry sheet when the cheese is laying flat (horizontally) is easier than rolling it up (vertically). Be sure to use the same amount of pressure on one end to the other for symmetrical portion sizes.

 

STEP 9

 

Using a sharp or serrated knife, carefully slice the roll into 14 portion sizes. Each slice should be around ¾ to 1 inch in thickness to bake evenly.

 

STEP 10

 

Using a spatula, carefully place the portion pieces flat on the baking sheet and brush with egg wash. Next, roughly cut basil and spread it across the baking sheet. 

 

STEP 11

 

Bake for 15 minutes and serve immediately!
