Earl Grey Green Tea Snickerdoodles

Recipe

Prep Time: 10 minutes 

Cook Time: 12-13 minutes

Serving Size: 24 small cookies

 

Ingredients: 

 

½ cup organic virgin coconut oil softened – Avafina Organics

1/3 cup coconut sugar

1 TSP vanilla extract

1 large free-range egg – The EggStore

1 2/3 cup organic all-purpose flour – Western Rice Mills

½ TSP baking soda

1 TSP cream of tartar

½ TBSP organic earl grey green tea loose leaf (see recipe notes) – Tega Tea

1/8 tsp pink Himalayan salt – Avafina Organics 

 

Cinnamon Sugar Topping:

 

2 TBSP coconut sugar

1 TSP organic cinnamon powder – Avafina Organics

 

Directions:

 

STEP 1

 

Preheat your oven to 350 F; line a baking sheet with parchment paper.

 

STEP 2

 

Cream the sugar and coconut oil in a large bowl for 2-3 minutes on medium speed until it is nice and fluffy. Then, add the vanilla extract and the egg and mix until fully incorporated (but do not overmix).

 

STEP 3

 

In a separate bowl, combine all dry ingredients (flour, baking soda, cream of tartar, loose leaf tea, and salt). Add to wet ingredients once it’s all combined, then mix on low speed until thoroughly combined (do not overmix).

 

STEP 4

 

Mix the cinnamon and sugar in a small bowl, then roll each cookie in the sugar topping and place on a baking sheet about 2 inches apart.

 

STEP 5

 

Bake for 12-13 minutes to yield small cookies. They will puff up during baking, so if you prefer a flatter cookie, use a spatula to press down on the cookies halfway through baking. When finished, cool the cookies for at least 5-10 minutes on the pan before placing them on a cooling rack.

 

Recipe Notes:

 

You might need a spice grinder if your tea leaves are chunky, as the recipe works best with finely ground tea leaves. Also, we adapted the recipe to use coconut sugar as it is a healthier alternative to white sugar, but feel free to use regular white sugar for a more traditional snickerdoodle consistency. Overall, we think you will love this recipe! It is the perfect combination of sweet and tea flavour that will have you craving just another bite! And if you make the cookies small enough, you won’t have any issues popping one after another in your mouth. Such a delicious mouthful the whole family can enjoy!
