Espresso Infused Flan

Recipe

Serving size: 6

 

Ingredients:

 

6 Large Eggs (room temperature) – McGillvary Creek Farm

3 Cups Water Buffalo Milk – Goats Pride Dairy

½ Cup Strong Brewed Espresso (room temperature) – Barking Irons Roastery

¾ Cup Sugar

½ Teaspoon Vanilla Extract 

Optional 

2 – 4 Oz Coffee Liqueur – Dragon Mist Distillery

 

Directions:

 

STEP 1

 

Brew the espresso according to the preferred method and set it aside to cool. 

  

STEP 2

 

In a large mixing bowl, add eggs and ¼ of the sugar, whisk until light in colour and thickened approx. 5 minutes. Strain cream into the egg mixture to remove any solidified milk fat. Add vanilla and milk and whisk until thoroughly combined. Add espresso and whisk to mix well. Set aside. 

 

STEP 3

 

Preheat oven to 350 degrees.

 

STEP 4

 

In a small skillet over high heat, add the remaining sugar and add 2/3 cup of water. Reduce the heat to medium-high and let it boil into a syrupy amber sauce, approx. 6 minutes. Please note: do not stir the sauce, instead swirl the pan to mix gently. 

 

STEP 5

 

Remove from heat and wait for the bubbles to settle before dividing it amongst six ramekins. Use caution as the caramel sauce is extremely hot and can cause severe burns. 

 

STEP 6

 

Very carefully place ramekins into a deep baking dish. Pour boiling water halfway to the ramekins. Pour egg mixture into the ramekins equally and carefully place into the oven for 50 minutes or until edges are set, and the center jiggles slightly.

 

STEP 7

 

Remove from oven very carefully and cool at room temperature for 15 minutes, then refrigerate for a minimum of 3 hours. When ready to serve, dip the bottom of the ramekin into boiling water for a minute to loosen the caramel sauce—additionally, use a sharp knife around the rim of the custard and place a dessert plate over the top of the custard cup and turn upside down. 

 

STEP 8

 

The custard should plop onto the dessert plate with the caramel sauce dripping over the top. Garnish with fruit, a cookie or waffle pieces. 

 

Recipe Notes:

 

You can garnish this elegant style of pudding dessert for an upscale dinner party to impress your guests! Simply add sliced strawberries on top of whipped cream with a microgreen basil leaf. Or if you want to be ultra-fancy, garnish with shaved chocolate bits on top of whipped cream and pieces of caramel and fruits cascading one side. The possibilities are endless!
