GF Lemon Almond Chia Seed Yogurt Parfait

Prep time: 5 – 10 minutes
Cook Time: 25 – 30 minutes + 10 – 15 minutes cool down

Ingredients:
Dry:
2 Cups Almond Flour – Avafina Whole Almond Flour
2 Tsp Coconut Flour – Avafina Organic Coconut Flour
½ Baking Soda
½ Baking Powder
¼ Salt
2 Tbsp Chia Seeds – Avafina Organic Chia Seeds
2 Tbsp Hemp Seeds – Avafina Organic Hemp Seeds
Wet:
3 Large Eggs – McGillvary Farm Fresh – Free Range
¼ Cup Honey – Bee Kind Vanilla Infused Honey
¼ Coconut Oil – Avafina Organic Virgin Coconut Oil
¼ Cup Lemon Juice
2 Tbsp Lemon Zest
Parfait:
1 Cup Goat Yogurt – Goat Milk French Vanilla Yogurt
1 Homemade Muffin
Honey - Bee Kind Vanilla Infused Honey
Chia Seeds – Avafina Organic Chia Seeds
Hemp Seeds – Avafina Organic Hemp Seeds
Sliced Almond – Avafina Organic Sliced Almonds
Pumpkin Seeds – Avafina Organic Pumpkin Seeds
Choice of Fruit:
Blueberries – Formosa Organic Blueberries
Strawberries
Raspberries – Peace Arch Variety Box
Cherries – Peace Arch Variety Box
Apricot – West Coast Wild Apricots
Directions:
STEP 1
Preheat the oven to 350 degrees for the muffin portion of this recipe.
STEP 2
Place muffin liner in the baking pans and set aside.
STEP 3
In a medium mixing bowl, combine eggs, honey, coconut oil, lemon juice and lemon zest for the muffin batter. Set aside
STEP 4
Add almond flour, coconut flour, baking soda, baking powder, salt, chia seed, hemp seed, and mix to combine in a large mixing bowl.
STEP 5
Pour wet batter into the dry batter mixing bowl and whisk well to combine. Do not over mix!
STEP 6
Using a large spoon fill 2/3 of the muffin liner with batter, place the muffin pan into the oven and bake for 25 minutes.
STEP 7
Carefully remove and set aside to cool down for 10 – 15 minutes before continuing.
STEP 8
Once cool, remove the muffin from the liner and crumble the muffin into several pieces. Place a couple of pieces at the bottom of the mason jar.
STEP 9
Add a couple of tablespoons of goat yogurt, top with berries, seeds and drizzle with honey. Repeat until filled to the top! Serve immediately to prevent the muffin layer from going soft!
Recipe Notes:
This recipe is super versatile as any fruit, or healthy superfood seeds can be used. Gluten and grain-free treat or use household staples such as regular whole wheat flour; the choice is yours!
You can create a more decadent parfait by using crumbled cake pieces and chocolate sauce and serve at parties as dessert for a more individualized personal touch.
