Garlic Herb Cross Rib Roast

Recipe

Prep Time: 10 – 15 minutes

Cook Time: 1 – 1.5 hours

Serving Size: 8

 

Ingredients

1 4 LB Cross Rib Roast

1 Whole Garlic Bulb; minced

3 Tbsp Fresh Thyme Leaves; chopped

3 Tbsp Fresh Rosemary Leaves, chopped

1 Tbsp Sea Salt

Fresh Ground Black Pepper

4 Tbsp Fig Balsamic Vinegar

2 Tbsp Garlic Infused Olive Oil

 

STEP 1

 

Remove roast from fridge minimum 1.5 hour before cooking to come up to room temperature.

 

STEP 2

 

Preheat oven to 450 degrees F. Pat dry the roast and place on a tray or cutting board.

 

STEP 3

 

Peel and mince the garlic then place in a medium dish. Roughly chop thyme and rosemary and put it in the garlic dish. Add salt, ground pepper, olive oil and mix carefully to create a thick paste.

 

STEP 4

 

Brush the roast with balsamic vinegar and make sure to cover every connective tissue, tendon and in between the roast muscle.

 

STEP 5

 

Place roast in a large roasting pan and cook for approx. 15 minutes to brown. Reduce oven temperature to 350 degrees F and cook for an additional 50 – 70 minutes depending on your preference of doneness level. Internal temperature of medium-rare at 130 – 135 F, Medium at 140 – 145 F, Medium-well at 150 – 155 F and Well done at 160 F.

 

STEP 6

 

Once the roast reaches to your preferred doneness, carefully remove roast from oven and cover loosely with aluminum foil to retain beef juices and allows the meat to settle in the juices to be moist and juicy. Let stand for approx. 15 – 20 minutes before craving and serving.

 

Note: the roast will continue to cook as it sets, and the temperature will rise approx. 5 – 10 degrees.

 

STEP 7

 

Remove foil, crave, and place in a large serving dish. You can also make gravy with the beef dripping or use as au jus for an extra kick of flavour.

 

STEP 8

 

Serve warm with mash potatoes and roasted veggies, or side salad and greek potatoes!

 

 

Recipe notes:

 

Nothing tastes better than cutting through a tender roast; make sure you bring the roast up to room temperature for that crisp, golden, garlicky herb crust. Using high quality ingredients such as the balsamic vinegar and olive oil will allow the roast to shine brightly among your guests.
