Grilled Steak with Garlic Mashed Broccoli

Ingredients:
1 lb Broccoli – Peace Arch Broccoli
1 Large Garlic Bulb – Peace Arch Jumbo Red Russian Garlic
2 14 oz Striploin Steak – High Point Striploin Steak
¼ Cup Olive Oil – All of Oils Savoury Butter
¼ Beef Bone Broth – Georels Beef Bone Broth
Cilantro Microgreens – Sky Harvest Micro Cilantro
BBQ Seasoning – Butcher Bro’s Traditional Smoke
Salt & Pepper
Directions:
STEP 1
Preheat the BBQ to 475 degrees. As the BBQ is warming up, generously season your room temperature steaks.
STEP 2
Place steak over direct heat, close the lid and grill the first side for approx. 5 minutes or to your desired doneness.
STEP 3
For cross grill marks, rotate the steak 90 degrees halfway at 2.5 minutes for a total of approx. 5 minutes.
STEP 4
Flip after approx. 5 minutes and grill for an additional 5 minutes or 2.5 minutes for grill cross marks.
STEP 5
Remove from heat and place on a plate to let rest for a minimum of 10 minutes. Resting the meat will allow the steak to reabsorbed the juices for a tender, juicy steak! You may lightly tent to keep warm, which helps the meat to continue to cook slightly longer. Set aside.
STEP 6
Bring a pot of water to a boil on high heat, and while the water is boiling, roughly chop up the broccoli into small pieces, including the steam. No need to cut into perfect sizes as we are going to use a food processor. Using the broccoli stems will add taste and texture, just remember to peel the stem if it’s quite thick and woody.
STEP 7
Using a basket steamer to prevent the broccoli from losing nutrients and becoming soggy, add the chopped broccoli and cook for approx. 5 to 6 minutes or until tender. Do not overcook, as the taste will be slightly diluted. Test when the broccoli is ready by using a fork to pierce the stem gently. Remove from heat and set aside.
STEP 8
Using a small skillet over medium heat, add olive oil and the peeled garlic bulb. Do not overcook the garlic; just lightly brown it for the maximum garlic flavour approx. 2 minutes.
STEP 9
Reduce heat to simmer and carefully add beef bone broth to stop the garlic from overcooking. Set aside and keep warm.
STEP 10
Add half of the steamed broccoli into a food processor and add the garlic and beef bone broth mixture—season with salt and pepper. Blend until smooth, remove and place into the empty skillet and keep warm.
STEP 11
Add the rest of the broccoli to the food processor and blend until desired smoothness or chunkiness.
STEP 12
Add the second batch of broccoli to the skillet and stir to combine well.
STEP 13
On a serving plate, scoop and add the garlic mashed broccoli on the plate. Next, add sliced steak and garnish with cilantro microgreens! Serve warm!
