Halloween Twist to a Classic Champagne Cocktail

Recipe

Prep Time: 5 minutes

Serving size: 8 glasses

 

Ingredients

1 Bottle of Champagne or Sparkling Wine - Festina Lente Estate Winery: Pomona Brut Cyser 750 ml

2 Cups of Unsweetened Cranberry Juice - The BOG Riverside Cranberry Farm: 100% Prue Cold Pressed Cranberry Juice 946 ml

4 oz of Vodka or Cognac (amount to your discretion) - Dragon Mist Distillery: Vodka 250 ml

Aromatic Bitters - Ravens Brewing & Distilling Co: Aromatic Bitters 100 ml

8 Sugar Cubes

16 Whole Lychees (canned is preferred)

16 Black or Green Olive (your preference)

 

Optional

Red Food Coloring

Flavour Liqueur (Cranberry, Pama Pomegranate, Campari)

 

STEP 1

 

Carefully place glasses in the freezer to chill and frost as no ice will be utilized in this recipe. 

 

STEP 2

 

Open and drain the lychee can and whole black/green olives. Place in a medium bowl.

 

STEP 3

 

Stuff each lychee with an olive and push a cocktail skewer through the middle to secure it in place. Set aside on a plate with the olive end facing upwards.

 

STEP 4

 

If using red food coloring to enhance the bloodshot eyeballs look, dab the outer rim of the lychee with a touch of food coloring. USE SPARINGLY as it will spread to create a miniature vein look. Once finished put the dish in the fridge to chill.

 

STEP 5

 

Remove the glasses from the freezer and place one sugar cube in each glass. Soak each sugar cube with as many drops of the aromatic bitters as you would like. Recommendation: 1 – 2 drops to enhance the drink.

 

STEP 6

 

Pour ½ oz of vodka or cognac to each glass. Then add ¼ cup of cranberry juice to each glass. Top with champagne or sparkling wine but leaving an inch at the rim for the bubbles and the garnish.

 

STEP 7

 

Garnish with lychee/olive eyeballs and enjoy!

 

Recipe Notes:

 

This classic champagne cocktail dates back to the mid-1800s which consist of a sugar cube with bitters in a glass before topping it with cognac and champagne for the ultimate classic cocktail. This super delicious drink will wow your guest while enhancing the many different luxurious flavour profile. Be sure to make this drink just before serving as its best consumed while chilled.
