Keto Blueberry Chicken Salad Cucumber Boats

Ingredients:

 

3 Chicken Breasts – High Point Plain Chicken Breast

2 Stalks Celery

1 Large Red Bell Pepper

2 Long English Cucumber

1 Cup Blueberries – Warkentin Organic Blueberries

¼ Cup Hemp Seeds – Avafina Organics Hemp Seeds

½ Cup Sliced Almonds – Avafina Organics Slice Almonds 

¼ Cup Black Sesame Seeds – Avafina Organics Black Sesame Seeds

¼ Cup Pumpkin Seeds – Avafina Organics Pumpkin Seeds

1 cup mayo 

1 Tbsp Olive Oil – All of Oils Tuscan Herb Olive Oil

Salt & Pepper 

Pinch of Garlic Powder

 

Optional: 

 

Microgreens – Food on the Grow Farms Ltd. Speckled Pea Microgreens

Goat Feta Cheese – Mt Lehman Buffalo Feta Cheese

 

 Directions:

 

STEP 1

Season the chicken breast with a pinch of salt and pepper on each side. Add olive oil in a medium skillet over high heat before adding the seasoned chicken breast to sear. Sear each side until golden brown and just crispy approx. 6-8 minutes per side, depending on how large the chicken breast is. Set aside to rest for 3 minutes. 

 

STEP 2 

Dice red bell pepper and chop celery stalks into small cubes. Place them in a medium-size mixing bowl. 

 

STEP 3

Carefully cut the chicken breast into medium-small cubes and place them in the mixing bowl with the celery and bell pepper. 

 

STEP 4

Add sliced almonds and pumpkin seeds and gently combine. Set aside.

 

STEP 5

Add mayo, hemp seeds, black sesame seeds, garlic powder, salt, and pepper in a small mixing bowl. Mix evenly to incorporate the seeds. Add mixture to the medium mixing bowl and gently combine everything evenly.  

 

STEP 6 

Add in blueberries and gently fold in but do not stir vigorously to break the blueberries apart. Once all ingredients are coated evenly in the mayo seed mixture, season to taste with salt and pepper. Set aside. 

 

STEP 7

Carefully cut the cucumber lengthwise in half and scoop out the seeds. Cut each half into quarters and place them on a serving plate. 

 

STEP 8 

Scoop the mixture onto the cucumber and serve immediately!

 

Recipe Notes: 

 

This recipe has many variations to serve your guest’s preference best! Substitute the cucumbers for mini bell peppers to scoop the mixture, or top with baked cheese crackers or even use cloud bread as a sandwich! This low-carb dish is excellent for lunch, brunch or dinner! Include this at your next charcuterie picnic, it's refreshing and super tasty!
