Pinto beans with Mediterranean lamb sausage

Recipe

Prep Time: 5 minutes / 20 minutes for cooking / 6 hours cooking and soaking beans

Serving Size: 4-8 people

 

Ingredients:

 

1 LB organic dried pinto beans from Western Rice Mills

2 TBSP infused early harvest extra virgin olive oil (Tuscan herb) from All of Oils

4-5 fresh sage leaves

2 cloves Spanish Roja garlic, crushed from Rivers Edge Garlic

3 TSP pink Himalayan sea salt from Avafina Organics

black peppercorns from Avafina Organics

 

5 TBSP infused early harvest extra virgin olive oil (Tuscan herb) from All of Oils

1 ½ LBS Mediterranean lamb sausage from Stapleton Sausage Co

4 cloves Spanish Roja garlic, crushed from Rivers Edge Garlic

3-4 canned plum tomatoes, chopped

1 cup tomato puree

Pinch of organic chili flakes from Avafina Organics

Salt and pepper to taste

 

Directions:

 

STEP 1 

 

Rinse beans under cold water, then place in a large pot and cover with a couple of inches of cold water. Soak for 4 hours.

 

STEP 2

 

Drain the beans, then return to the pot and add 3 quarts of water. Add 2 TBSP olive oil, the sage leaves, 2 cloves of garlic, 3 TSP salt, and the peppercorns. Then, bring to a simmer on medium heat and simmer for about 1 hour. Lower the heat and continue to simmer for another 1-2 hours or just until the beans are tender. Once done, remove from the heat and let cool—reserve ½ cup of cooking liquid and drain the rest from the beans.

 

STEP 3

 

Heat 1 TBSP of oil in a large skillet, remove sausage from casing, break apart and cook until lightly browned about 3-5 minutes.

 

STEP 4

 

Add reserved bean liquid, plus 4 TBSP oil, garlic, chopped tomatoes and red chili flakes. Stir until slightly thickened, about 4-5 minutes.

 

STEP 5

 

Add the pinto beans and tomato puree—season with salt and pepper. Simmer a few more minutes, stirring gently.

 

STEP 6

 

Once cooled down a bit, serve alone or with a side of rustic bread, brown rice or your favourite pasta.
