Sausage Eggs Benedict Casserole

Recipe

Prep Time: 10 – 15 minutes

Cook Time: 45 – 55 minutes

Serving Size: 8

 

Ingredients:

 

4 Ciabatta Rolls [diced into ½” cubes] 

8 Large Eggs – Skyland Acres

4 English Breakfast Sausages [sliced or diced] – Stapleton Sausages

2 Cups Water Buffalo Milk – Goat’s Pride Dairy

1 Cup Buffalo Cheddar Cheese [cubed or shredded] – Goat’s Pride Dairy

1 Tsp Pink Salt – Chef Laura

1 Tsp Paprika – Chef Laura

1 Tsp Ground Black Pepper – Chef Laura

1 Tsp Oregano or Basil – Chef Laura

 

Hollandaise Sauce:

 

3 Large Eggs Yolks – The Eggstore 

½ Cup Butter [room temperature]

1 Tbsp Lemon Juice 

¼ tsp Dijon Mustard 

 

Directions:

 

STEP 1

 

In a large non-stick skillet over medium-high heat, place sliced or diced sausages and cook for approx. 3 – 4 minutes on each side. Set aside. 

 

STEP 2

 

Spray cooking oil in a 9x13 inch casserole dish and place dice ciabatta rolls in the dish. Place cooked sausages in the dish and stir to combine. 

 

STEP 3

 

In a large mixing bowl, combine eight eggs, milk, spices, and whisk. Pour mixture over the bread and sausage and stir to combine. Spread shredded cheese evenly or gently fold in cubed cheese. Gently press bread in the dish to soak up the egg mixture evenly.

 

STEP 4

 

Saran wrap tightly and refrigerate for a minimum of 4 hours, recommend 8 hours overnight for best results! 

 

STEP 5

 

Preheat oven to 375 degrees. Remove casserole dish from the fridge, remove saran wrap, cover with aluminum foil, and place in the oven.

 

STEP 6

 

Bake for 35 minutes, then carefully remove foil and bake for another 10 – 15 minutes or until the top is lightly golden and custard is set. 

 

STEP 7

 

Hollandaise sauce: In a blender, combine egg yolks, dijon mustard and freshly squeezed lemon juice. Place butter in a microwave-safe dish and melt in 15-sec intervals until very hot and bubbly. 

 

STEP 8

 

Turning the blender on low, carefully remove melted butter from the microwave and, using caution to avoid splashing on yourself, slowly pour the hot butter into the blender to incorporate with the rest of the sauce. Blend until smooth and drizzle on top of the casserole. Serve extra sauce on the side!

This recipe is super easy to prepare, and you end up with a quick, hearty breakfast that can be enjoyed before dropping the kids off at school or before work! It can also be customized by adding bacon, veggies, hemp or flax seeds for some extra protein! Top it with smoked salmon or garnish it with microgreens for a hint of freshness!
