Chocolatey Espresso Fudge

Ingredients:
3 cups semisweet chocolate chips (milk/white/dark)
1 can sweetened condensed milk
4 tbsp strong brewed espresso (room temperature) – Barking Irons Roastery Ranch Hand
1 tsp butter (softened)
1 tsp vanilla extract
1 tsp ground cinnamon – Avafina Organics
1/8 tsp pink Himalayan salt – Avafina Organics
Optional Toppings:
Chopped pecans
Shelled pistachios – Ayoub’s Dried Fruits & Nuts
Sliced almonds – Avafina Organics
Freeze-dried fruits – Origo Foods Variety Pack
Directions:
STEP 1
Line an 8-inch square baking dish with parchment paper and lightly grease with butter. Set aside.
STEP 2
Add strong brewed coffee, chocolate chips, and condensed milk in a large microwave-safe bowl. Microwave on high for 1 minute uncovered and carefully stir to combine. Add ground cinnamon, vanilla extract, and Himalayan salt. Stir until smooth and combined.
STEP 3
Add in optional ingredients and gently stir to combine without fully incorporating. Gently pour the mixture into the baking dish and spread the mixture evenly using the back of a spoon.
STEP 4
Cover with foil and refrigerate for approx. 2 hours or until firm. Do not place in the freezer to set faster as the fudge can go bad due to the separation of ingredients. Instead, holding the ends of the parchment paper, lift the fudge and place it on the cutting board. Cut into 1-inch squares or your preferred size. Serve immediately or place in airtight containers at room temperature.
