Vibrant Beet Salad with Goat Cheese

Ingredients:

 

4-5 medium red beets (1 bunch) – Peace Arch Farms Ltd.

Persian Lime Infused Early Harvest Extra Virgin Olive Oil for drizzling – All of Oils

2 cups Gourmet Baby Lettuce Head Mix – Northern Greens

½ shallot, sliced thinly

½ pear, sliced thinly

¼ cup chopped Dry Roasted Almonds (Lime & Saffron) – Ayoub’s Dried Fruits & Nuts

2 ounces chevre herb and garlic – Goat’s Pride Dairy

Microgreens, Organic Sexy Salad Boost – Sky Harvest

Cranberry/Pear Infused Premium Rose Balsamic Vinegar – All of Oils

Directions: 

 

STEP 1 

 

Preheat your oven to 400 F.

 

STEP 2

 

Clean and dry beets, then drizzle with olive oil and season with salt and pepper. Wrap each beet individually in aluminum foil, then place the beets on a baking sheet and roast for 40-90 minutes until you can pierce easily with a fork.

 

STEP 3

 

Unwrap the beets and allow them to cool, then peel off the skin. Let chill in the fridge until you are ready to prepare the salad.

 

STEP 4

 

For the salad, cut beets into bite-sized pieces. Add torn lettuce, shallot, pear, almonds, and microgreens in a medium-sized bowl. Toss to combine, then drizzle with balsamic vinegar to taste.

 

STEP 5

 

Add chunks/pieces of goat cheese and toss salad again until everything is combined and nicely coated with the dressing. Season with salt and pepper and serve immediately. Enjoy!
