We started growing kale to experiment with the flavour and quickly learned that this microgreen works beautifully as a bed to base a salad on. The stronger stem on kale adds a slight crunch. The pink hue of the stem adds a hint of colour and the green leaf serves as a backdrop to whatever your imagination dares to drop on top of a salad you'll remember.
