Dragon's Blessing Soy Sauce Chicken Recipe

INGREDIENTS

1 Whole Chicken 3lb -  Campbell Valley Farms - Fresh Certified Organic Whole Chicken

1/2 Cup Dark Soy Sauce 

1/2 Cup Shaoxing Wine (Chinese Rice Wine OR Dry Sherry)

1/4 Cup Brown Sugar

5 Cloves Garlic, Smashed

2 Slices Ginger

2 Star Anise

2 Cinnamon Sticks - Chef Laura - Gourmet 12 Spice Collection Tin Box

3 Green Onions, Chopped

4 Cups Water

1 TBSP Vegetable Oil - All of Oils - Savoury Butter Infused EVOO

Rice, for serving - Western Rice Mills - Organic Brown Jasmine Rice

 

INSTRUCTIONS:

Rinse the chicken under cold water and pat dry with paper towels. Trim off any excess fat and remove any giblets from the cavity.

 

In a large pot or Dutch oven, heat the vegetable oil over medium heat. Add the smashed garlic, ginger slices, star anise, and cinnamon sticks. Stir-fry for about 1 minute until fragrant.

 

Add the soy sauce, dark soy sauce, Shaoxing wine, brown sugar, and chopped green onions to the pot. Stir until the sugar is dissolved.

 

Place the whole chicken into the pot, breast side down. Pour in enough water to cover the chicken. Bring the liquid to a boil over high heat.

 

Once boiling, reduce the heat to low, cover the pot, and simmer for about 30 minutes.

 

After 30 minutes, turn the chicken over so the breast side is facing up. Continue to simmer, covered, for another 30 minutes or until the chicken is fully cooked and tender. You can check for doneness by inserting a skewer into the thickest part of the chicken; the juices should run clear.

 

Once the chicken is cooked, carefully remove it from the pot and place it on a cutting board. Let it rest for a few minutes before slicing.

 

While the chicken is resting, strain the cooking liquid to remove the solids. You can reserve some of the liquid for serving as a dipping sauce or use it to make a gravy.

 

Serve the sliced soy sauce chicken with steamed rice and your choice of vegetables. Drizzle some of the reserved cooking liquid or gravy over the chicken if desired.
