Ingredients
6 Medium or Large Farm-Fresh Eggs McGillvary Creek Farms Farm Fresh - Free Range 12 Eggs
1/4 cup Plain Goat or Buffalo Yogurt Goat's Pride Dairy Water Buffalo Yogurt 500 g
1 TBSP Dijon Mustard
1/4 Cup Fresh Chives, finely chopped
1/4 Cup Ripe Tomatoes, finely diced
1/4 Cup Fresh Romaine Lettuce, finely chopped Northern Greens Parris Island Romaine Lettuce
1/4 TSP Paprika Chef Laura Gourmet 12 Spice Collection Tin Box
Salt & Pepper to taste All of Oils Black Truffle Infused Sea Salt

Instructions
Boil the Eggs:
Place the eggs in a saucepan and cover them with cold water.
Bring the water to a boil, then reduce the heat to a gentle simmer.
Let the eggs simmer for about 10-12 minutes.
Drain the eggs and transfer them to an ice water bath for 5 minutes.
Carefully peel the eggs and cut them in half lengthwise. Remove the yolks and set them aside.
Prepare the Filling:
In a bowl, mash the egg yolks until they are smooth and crumbly.
Add plain yogurt, Dijon mustard, and paprika to the mashed yolks. Mix until well combined.
Season with salt and pepper to taste.
Add Fresh Ingredients:
Gently fold in the finely chopped chives, diced tomatoes, and chopped romaine lettuce into the yolk mixture. This adds a wholesome and colorful twist to your deviled eggs.
Fill the Egg Halves:
Using a small spoon or a piping bag, carefully fill each egg white half with the yolk mixture. You can make them as fancy or rustic as you like!

Pickled Onions
Ingredients
1 Small Yellow Onion, thinly sliced Skyland Acres Yellow Onions 2 lb bag
1/2 Cup Red Wine Vinegar
1/4 Cup Water
2 TBSP Granulated Sugar
1 TSP Salt
1/2 TSP Black Peppercorns
Optional: 1 small red chili pepper, sliced for a spicy kick
Instructions:
1. Prepare the Pickled Red Onions:
In a small saucepan, combine the red wine vinegar, water, granulated sugar, salt, black peppercorns, and the optional red chili pepper if you like it spicy.
Bring the mixture to a simmer over medium heat, stirring until the sugar and salt are dissolved.
Add the thinly sliced red onion to the mixture and let it simmer for about 1-2 minutes.
2. Let Them Cool:
Remove the saucepan from heat and let the pickling mixture cool to room temperature.
3. Add Pickled Red Onions to Deviled Eggs:
After you've filled your egg white halves with the yolk mixture, place a small amount of pickled red onions on top of each deviled egg as a garnish. The sweet and tangy flavor will complement the other fresh ingredients and add a unique twist to your deviled eggs.
4. Serve:
