Meatball sausage veggie casserole
Prep Time: 25 – 30 minutes
Cook Time: 35 – 45 minutes
Serving Size: 8
1 lb Chipotle Cheddar Sausage – Stapleton Sausage
1/2 lb Lean Ground Beef – Winners Farms Ground Beef
400 ml Beef Bone Broth – Georels Bone Broth
3 or 4 Rainbow Carrots – Wisbey Veggies
3 or 4 Yukon Potatoes – Wisbey Veggies
1 Medium Onion
3 Cups Broccoli
Traditional Smoke Seasoning Spice – Butcher Bros BBQ
Preheat oven to 350 degrees.
Peel and roughly chop carrots and potato, rinse and set in a colander. Cut Broccoli into tiny florets, rinse and place in the same colander. Remove onion skin and chop into 1/4 inch and place in the same colander. Set aside.
Cut sausages carefully into medium-sized chunks. Set aside. Place ground beef in a bowl and add some seasoning spice, mix to combine and set aside.
Using a large baking dish (sheet pan), transfer the veggies and spread them evenly. Carefully place sausages evenly between the veggies on a single layer to ensure even cooking.
Using a large spoon, scoop beef onto palm and roll the beef into 1-inch balls, place evenly across the baking dish on top.
Gently and carefully, pour beef bone broth over the veggies and meats, covering evenly.
Drizzle some olive oil and sprinkle seasoning spice.
Carefully place in the oven and bake for 35 – 45 minutes (depending on your oven) until the meatballs are no longer pink in the middle.
Carefully remove and serve hot!
This hearty dish is perfect for a big family dinner, and there will surely be leftovers still!
