STEP 1
Wash and cut tomatoes. Rinse microgreens. Slice bread.
STEP 2
In a skillet, cook the Irish sausages over medium heat for about 10 minutes until they are browned on all sides. Once they are cooked, remove them from the skillet and set them aside.
STEP 3
In the same skillet, cook the Irish bacon until it is crispy. Once it is cooked, remove it from the skillet and set it aside with the sausages.
STEP 4
Cut the tomatoes into thick slices and add them to the skillet. Cook for 5-7 minutes or until they are slightly browned.
STEP 5
While the tomatoes are cooking, heat the baked beans in a saucepan over low heat.
STEP 6
In a separate skillet, melt the butter over medium heat. Crack the eggs into the skillet and cook them to your liking. We recommend cooking them over-easy or sunny-side up.
STEP 7
Toast the soda bread slices in the oven for a few minutes until they are lightly browned. Spread butter or jelly or jam!
STEP 8
Arrange the sausages, bacon, tomatoes, and eggs on a plate, and serve with the baked beans and toast on the side.
