Popcorn Chicken Bites

Recipe

Prep Time: 5 minutes

Cook Time: 10 – 15 minutes

Serving: 2

 

Ingredients:

 

3 Chicken Breast – Dhesi Meat  

½ Cup Quinoa Flour – Avafina Organics 

3 – 5 Garlic Cloves – Japonica 

2 Tbsp Honey – Bee Kind Honey Infusion 

2 Tbsp Soy Sauce

2 Tbsp Sake

2 Tbsp Sesame Oil 

Oil 

 

Garnish:

 

Broccoli Microgreens – Porchside Harvest 

Sesame Seeds – Avafina Organics 

Salt & Pepper – Avafina Organics 

 

Directions:

 

STEP 1 

 

Rinse chicken breasts from impurities and remove any excess fat. Then, carefully slice the chicken into 1-inch cube chunks and place it into a medium bowl.

 

STEP 2

 

Peel and mince garlic; add to a small bowl. Add soy sauce, sake, sesame oil and honey. Whisk until honey is completely dissolved and add to the chicken bowl. Stir to combine, cover, and refrigerate for an hour to marinate thoroughly. 

 

STEP 3

 

In a medium pot over high heat, add oil and wait until the temperature reaches 340F for the first fry section. 

 

STEP 4

 

As the oil is heating up, remove chicken from the fridge and gently stir to incorporate marinade. If there is excess liquid, carefully drain but do not remove all liquid. Sprinkle quinoa flour and toss chicken to coat but do not thoroughly combine as the flour pockets create the extra crispy texture. 

 

STEP 5

 

Carefully and gently, add chicken pieces into the pot without overcrowding to prevent clumping together for approximately 5 – 7 minutes until lightly golden. Transfer onto a plate with a lined paper towel to remove excess oil. Let rest until the temperature reaches 390F.

 

STEP 6

 

Add the chicken to the pot and fry for approximately 2 – 3 minutes until golden brown and crispy. Transfer to a different plate with a lined paper towel to soak up excess oil. 

STEP 7

 

Repeat until all chicken pieces are cooked and fried. Replace paper towels often when excess oil has started soaking through. 

 

STEP 8

 

Place chicken in a large serving platter and add various dips. Garnish with broccoli microgreens for a pop of freshness.
