Sweet and Crisp Honey Cookies

Serving: 30 cookies
½ cup + 2 TBSP Single Varietal Early Harvest Extra Virgin Olive Oil – All of Oils
2/3 cup sugar
¼ cup Iced Honey – Bee Kind Honey Infusions
1 large free-range egg – Skyland Acres
1 TSP vanilla
2 cups Full Harvest Organic All-Purpose Flour – Western Rice Mills
2 TSP baking soda
½ TSP baking powder
¼ TSP Gourmet 12 Spice Collection Tin Box pink salt – Chef Laura
1/3 cup coarse turbinado sugar
Preheat your oven to 375 F and line a cookie sheet with parchment paper.
Using a large mixing bowl, combine the olive oil, sugar and honey, mixing until fully incorporated.
Add the vanilla and egg to the oil mixture. Mix everything until well combined, and the sugar has dissolved, which may take 3-4 minutes.
Using a different bowl, combine the flour, baking soda, baking powder, and salt and mix so that there are no lumps.
Add the flour mixture to the oil mixture and carefully combine until incorporated.
Shape 1 TBSP of dough using a spoon, then roll it in the turbinado sugar, making sure that the cookie is evenly coated.
Place 2 ½ inches apart on the baking sheet and bake for 8 minutes. Once they are nicely brown around the edges, they are done! Allow to cool, then transfer the cookies onto a wire rack to cool completed. Then, enjoy!
