Serving Size: The recipe makes approximately 4 - 8 servings, depending on how large or small you divide the pie.

Prep Time: Approximately 20 minutes (including fruit preparation and assembling the pie).

Chill Time: Requires at least 4 hours of freezing time.

 

Ingredients:

2 cups frozen strawberries,  sliced The Egg Store BumbleBerry Farms Frozen Strawberries

2 cups frozen rhubarb, diced The Egg Store BumbleBerry Farms Frozen Rhubarb

1/2 cup honey (adjust according to taste) BC Buzz Honey Wildflower Honey

1 tablespoon lemon juice 

1 teaspoon vanilla extract

1 pre-made pie crust 

1 cup heavy cream Goat's Pride TESFA Water Buffalo Milk

GARNISH

Fresh melon microgreens leaves 

Sliced fresh strawberries

Freeze dried strawberries Origo Foods Freeze Dried Fruit Strawberry

 

Instructions:

In a large mixing bowl, combine the sliced strawberries and diced rhubarb. Drizzle the honey over the fruit and gently toss to coat them evenly. Let the mixture sit for about 10 minutes to allow the flavors to meld together.

 

After 10 minutes, add the lemon juice and vanilla extract to the fruit mixture. Stir gently to combine. Taste the mixture and adjust the sweetness by adding more honey if desired. 

 

Roll out the pie crust and line a 9-inch pie dish with it, following the instructions on the package or using your homemade recipe. Prick the bottom of the crust with a fork to prevent it from puffing up during baking.

 

Pour the strawberry and rhubarb mixture into the pie crust, spreading it evenly. Smooth out the top with a spoon or spatula.

 

Place the pie dish in the freezer and let it freeze for at least 4 hours, or until it becomes solid.

 

Before serving, remove the pie from the freezer and let it sit at room temperature for a few minutes to soften slightly.

 

In the meantime, whip the heavy cream until stiff peaks form. This will be the topping for your frozen pie.

 

Slice the frozen strawberries and rhubarb pie into wedges and serve each slice with a dollop of whipped cream on top. Garnish with fresh sliced strawberries and fresh melon microgreen leaves for added freshness and color.
